Strudel Dough Preparation

    Make the Dough

    In a large bowl, combine flour and salt. In a separate bowl, mix water, egg, and olive oil. Gradually add the wet ingredients to the flour, mixing until a dough forms. Knead on a floured surface for about 5 minutes, then wrap in plastic wrap and let rest for 30 minutes.

    Prepare the Filling

    In a bowl, combine sliced pears, sugar, cinnamon, vanilla extract, and chopped toasted almonds. Mix well and set aside.

Vanilla Flan Preparation

    Make Caramel

    In a saucepan, melt sugar over medium heat until it turns golden brown. Quickly pour into a flan mold or individual ramekins to cover the bottom and let it harden.

    Prepare Flan Mixture

    In a blender, combine sweetened condensed milk, evaporated milk, eggs, and the seeds scraped from the vanilla bean. Blend until smooth, then pour over the caramel in the mold.

    Bake the Flan

    Place the flan mold in a larger baking dish filled with hot water (water bath). Bake at 350°F (175°C) for 50-60 minutes or until set. Let cool and refrigerate before serving.

Parsnip Ice Cream Preparation

    Cook the Parsnips

    Boil parsnips in salted water until tender, about 15 minutes. Drain and purée them with cream, milk, sugar, and vanilla extract until smooth.

    Chill and Churn

    Chill the mixture in the refrigerator for at least 2 hours, then churn in an ice cream maker according to the manufacturer's instructions. Freeze until firm.

Strudel Assembly and Baking

    Assemble the Strudel

    Roll out the rested dough on a floured surface until very thin. Spread the pear filling evenly over the dough, then roll it up tightly, tucking in the edges.

    Bake the Strudel

    Place the rolled strudel on a baking sheet lined with parchment paper. Brush with melted butter and bake at 375°F (190°C) for 25-30 minutes or until golden brown.
