    Prepare the Lamb

    Preheat your oven to 375°F (190°C). Season the lamb saddle with salt and black pepper. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the lamb on both sides until browned, about 4 minutes per side.

    Roast the Lamb

    Transfer the skillet to the oven and roast the lamb for about 20-25 minutes for medium-rare. Use a meat thermometer to check for doneness (135°F or 57°C). Remove from the oven and let it rest for 10 minutes before slicing.

    Prepare the Fricassée

    In another pot, heat butter over medium heat. Add minced garlic and sauté until fragrant. Add cranberry beans and fava beans, stirring to combine. Pour in vegetable broth and bring to a simmer.

    Cook the Vegetables

    Add the Tokyo turnips to the pot and season with fresh thyme, salt, and pepper. Cook until the beans and turnips are tender, about 15 minutes.

    Serve

    Slice the lamb saddle and serve on a plate with the fricassée of beans and turnips. Drizzle with any remaining sauce from the pan.
