Soup Preparation

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

    Cook Mushrooms

    Add the chopped wild mushrooms to the pot and sauté for about 10 minutes, until they are soft and have released their moisture.

    Add Broth

    Pour in the vegetable broth and bring the mixture to a gentle boil. Reduce heat and let simmer for 20 minutes.

    Blend and Finish

    Using an immersion blender, blend the soup until smooth. Stir in the heavy cream and season with salt and black pepper to taste. Add the shaved winter truffle and mix well.

Crispy Sunchokes

    Prepare Sunchokes

    Preheat the oven to 425°F (220°C). Toss the thinly sliced sunchokes with olive oil and season with salt.

    Roast Sunchokes

    Spread the sunchokes in a single layer on a baking sheet. Roast for 20-25 minutes, flipping halfway through, until they are golden brown and crispy.

    Ladle the wild mushroom soup into bowls, top with crispy sunchokes, and garnish with celery cress.
