    Prepare the Sole

    Pat the Dover sole fillets dry with paper towels. Season both sides with salt and black pepper. Dredge the fillets in all-purpose flour, shaking off the excess.

    Cook the Fish

    In a large skillet, melt 4 tablespoons of butter over medium-high heat. Once the butter is foaming, add the sole fillets. Cook for about 3-4 minutes on each side until golden brown and cooked through. Remove the fillets from the skillet and set aside on a warm plate.

    Make the Meunière Sauce

    In the same skillet, add the remaining 2 tablespoons of butter. Allow it to brown slightly, stirring constantly. Add lemon juice and capers, mixing well to combine. Cook for an additional minute until heated through.

    Serve

    Pour the meunière sauce over the cooked sole fillets and serve immediately with lemon wedges on the side.
