Preparation of Rabbit

Prepare the Rabbit
Preheat the oven to 180°C (350°F). Season the saddle of rabbit with salt and pepper. In a large ovenproof skillet, heat some butter over medium-high heat. Sear the rabbit on all sides until golden brown, about 5-7 minutes. Transfer to the oven and roast for 25-30 minutes or until cooked through. Let rest before slicing.

Prepare Schupfnudeln
In a pot of boiling salted water, cook Schupfnudeln according to package instructions. Drain and set aside.

Prepare the Sauce
In the same skillet used for the rabbit, add the brandy and scrape up any browned bits. Allow the brandy to reduce by half. Stir in the red currant jelly and stock, and simmer for 5-7 minutes until slightly thickened. Adjust seasoning with salt and pepper.

Serve the Dish
Slice the rested saddle of rabbit and place it on a plate. Arrange the Schupfnudeln, sautéed salsify, and carrots around it. Top with braised red cabbage and drizzle with the red currant jus. Serve immediately.
