    Prepare the Potatoes

    Start by washing and peeling the potatoes. Cut them into thin slices, approximately 1/4 inch thick.

    Cook the Potatoes

    In a large pot, bring salted water to a boil. Add the potato slices and cook for about 5-7 minutes until they are just tender but not falling apart. Drain and set aside.

    Prepare the Crème Fraîche Mixture

    In a bowl, mix the crème fraîche with chopped chives, salt, and black pepper to taste. Stir until well combined.

    Layer the Potatoes

    In a baking dish, drizzle olive oil on the bottom. Layer half of the cooked potato slices, then half of the crème fraîche mixture. Repeat with the remaining potatoes and crème fraîche.

    Bake the Dish

    Preheat the oven to 200°C (400°F). Bake the layered potatoes for about 25-30 minutes, or until the top is golden and bubbly.
