    Prepare the Potatoes

    Boil the new potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

    Cook the Plaice

    In a large skillet over medium heat, melt some butter. Season the plaice fillets with salt and pepper, then cook in the skillet for about 3-4 minutes on each side until golden brown and cooked through. Remove and keep warm.

    Make the Citrus Beurre Noisette

    In the same skillet, add more butter and let it brown slightly. Add capers and a splash of citrus juice (lemon or orange) and swirl to combine, cooking for another minute.

    Sauté the Samphire

    In a separate pan, briefly sauté the samphire in a little olive oil for 2-3 minutes until tender but still vibrant.

    Assemble the Dish

    On each plate, place a portion of the boiled potatoes, top with the plaice, and spoon over the citrus beurre noisette. Add a side of sautéed samphire and garnish with chopped fresh parsley and halved baby gem lettuce.
