    Prepare the Pan

    Preheat your oven to 375°F (190°C). Grease a madeleine pan with butter and dust it lightly with flour.

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat. Once melted, set it aside to cool slightly.

    Mix the Wet Ingredients

    In a large mixing bowl, whisk together the granulated sugar, honey, and eggs until the mixture is pale and fluffy. Add the vanilla extract and mix well.

    Combine Dry Ingredients

    In a separate bowl, sift together the all-purpose flour, baking powder, and salt.

    Combine Mixtures

    Gradually fold the dry ingredients into the wet mixture until just combined. Then, slowly pour in the melted butter and gently fold until smooth. Be careful not to overmix.

    Fill the Pan

    Spoon the batter into the prepared madeleine molds, filling each cavity about 2/3 full.

    Bake

    Bake in the preheated oven for 10-12 minutes, or until the madeleines are golden and spring back when lightly pressed.

    Cool and Serve

    Remove from the oven and let them cool in the pan for a few minutes before transferring to a wire rack. Serve warm, optionally dusted with powdered sugar.
