    Prepare Ingredients

    Rinse the Manila clams under cold water. Scrub the shells to remove any sand. Set aside. Peel and dice the Yukon Gold potatoes into small cubes. Chop the lovage leaves finely.

Cooking

    Cook the Potatoes

    In a pot of boiling salted water, add the diced Yukon Gold potatoes and cook for about 10-12 minutes until tender. Drain and set aside.

    Sauté Clams

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute. Add the Manila clams and white wine. Cover and cook until the clams open, about 5-7 minutes. Discard any clams that do not open.

    Sear Scallops

    In another skillet, heat the remaining olive oil and butter over high heat. Season the scallops with salt and black pepper. Sear the scallops for about 2-3 minutes on each side until golden brown and cooked through.

    Combine and Serve

    Add the cooked potatoes and lovage to the skillet with the clams. Toss gently to combine. Plate the clams and potatoes, and top with the seared scallops. Garnish with additional lovage if desired.
