    Prepare the Lobster

    In a large pot, bring salted water to a boil. Add the lobster tails and cook for 5-7 minutes until just cooked. Remove the lobster, cool slightly, and then remove the meat from the shells. Chop the meat into bite-sized pieces and set aside.

    Cook the Vegetables

    In a skillet over medium heat, melt 2 tablespoons of butter. Add the leeks and cook until soft, about 3 minutes. Add the morels and asparagus, cooking for an additional 5 minutes until the vegetables are tender. Remove from heat.

    Make the Sauce

    In a saucepan, melt the remaining butter over medium heat. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the milk, cooking until the mixture thickens. Stir in the Gruyère cheese until melted and smooth, then fold in the prepared Hollandaise sauce.

Assembly and Broiling

    Combine and Fill

    Preheat the broiler. In a bowl, mix the lobster meat with the sautéed vegetables and the cheese sauce. Spoon the mixture back into the lobster shells.

    Broil the Lobster

    Place the filled lobster shells on a baking sheet and broil for 3-5 minutes, or until the top is golden and bubbly.

    Garnish and Serve

    Remove from the oven, sprinkle with chopped parsley, and serve immediately.
