Sponge Layer

Prepare the Sponge Layer

    Preheat the oven to 350°F (175°C). In a mixing bowl, whisk together the eggs and granulated sugar until light and fluffy. Add vanilla extract and mix well.

    In another bowl, sift together the flour, baking powder, and salt. Gradually fold the dry ingredients into the egg mixture until just combined.

    Pour the batter into a greased 9-inch round cake pan. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let cool.

Prepare the Fruit Layer

    In a bowl, combine the mixed seasonal fruits, granulated sugar, and lemon juice. Let sit for 15 minutes to macerate.

Prepare the Mousse Layer

    Dissolve Gelatin

    In a small bowl, sprinkle the gelatin over water. Let it sit for 5 minutes to bloom, then heat gently until dissolved.

    In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. Slowly fold in the dissolved gelatin until fully incorporated.

Assemble the Entremet

    Cut the cooled sponge layer in half horizontally. Place one layer in a cake ring or springform pan. Spread half of the fruit mixture over the sponge, followed by half of the mousse. Repeat with the second layer.

Decoration
