Panna Cotta

Strawberry Topping

Method

Panna Cotta Preparation

1

Prepare Gelatin

In a small bowl, sprinkle gelatin over cold water and let it sit for about 5 minutes to bloom.

2

Heat Cream Mixture

In a saucepan, combine heavy cream, whole milk, sugar, and the seeds from the vanilla bean (along with the pod). Heat over medium heat until the mixture is hot but not boiling.

3

Combine Gelatin

Remove the saucepan from heat. Add the bloomed gelatin to the warm cream mixture and stir until fully dissolved.

4

Chill Panna Cotta

Pour the mixture into individual serving cups or molds. Refrigerate for at least 4 hours, or until set.

Strawberry Topping Preparation

5

Prepare Strawberries

While the panna cotta sets, hull and slice the Ontario strawberries. In a bowl, combine strawberries with sugar and Lillet Blanc. Let them macerate for about 30 minutes.

Serving

6

Serve

Once the panna cotta is set, top each serving with the macerated strawberries and any juices from the bowl.
