Method

Panna Cotta

    Prepare Gelatin

    In a small bowl, sprinkle gelatin over cold water and let it bloom for 5 minutes.

    Heat Cream Mixture

    In a saucepan, combine heavy cream, whole milk, sugar, and the scraped vanilla bean (along with the pod). Heat over medium heat until sugar dissolves and mixture is hot, but not boiling.

    Combine Mixtures

    Remove the saucepan from heat, add the bloomed gelatin and stir until fully dissolved. Remove the vanilla pod.

    Chill

    Pour the mixture into molds and refrigerate for at least 4 hours or until set.

Strawberry Consommé

    Blend Strawberries

    In a blender, combine fresh strawberries, sugar, water, and lemon juice. Blend until smooth.

    Strain

    Strain the mixture through a fine sieve or cheesecloth to extract clear liquid. Chill in the refrigerator.

Milk Crumb

    Prepare Crumb Mixture

    In a bowl, mix together milk powder, flour, sugar, and melted butter until crumbly.

    Bake

    Spread the mixture on a baking sheet and bake at 300°F (150°C) for about 15 minutes or until golden brown. Let cool.

Raspberry Sorbet

    Prepare Raspberry Puree

    In a blender, blend fresh raspberries, sugar, water, and lemon juice until smooth.

    Chill and Freeze

    Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions. Freeze until firm.
