Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Brown the Butter
In a small saucepan, melt the butter over medium heat until it turns golden brown and has a nutty aroma. Remove from heat and let cool slightly.

Mix Dry Ingredients
In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Fold in the grated carrots and chopped walnuts.

Bake the Cake
Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Prepare the Frosting
In a mixing bowl, combine mascarpone cheese, powdered sugar, heavy cream, and vanilla extract. Whip until the mixture is smooth and fluffy.

Frost the Cake
Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of frosting on top. Place the second layer on top and frost the top and sides of the cake.
