    Make the Chicken Mousse

    In a food processor, blend the chicken breast, heavy cream, egg yolks, salt, and white pepper until smooth. Pass the mixture through a fine sieve to ensure a silky texture.

    Stuff the Morels

    Carefully clean the morels and stuff each one with the chicken mousse. Place them on a baking tray lined with parchment paper.

    Prepare Chicken Skin

    Lay chicken skin flat on another baking tray and bake at 180°C (350°F) until crispy, about 15 minutes. Let cool and break into shards.

Cooking

    Poach the Eggs

    Bring a pot of water to a simmer. Poach the eggs one at a time for about 3-4 minutes. Remove with a slotted spoon and set aside.

    Bake the Stuffed Morels

    Bake the stuffed morels in a preheated oven at 180°C (350°F) for about 10-12 minutes until heated through.

Assembly

    Plate the Dish

    On each plate, place two stuffed morels. Top each with a poached egg, drizzle with vin jaune, and garnish with crispy chicken skin and croûtons.
