    Sear the Short Ribs

    Preheat the oven to 325°F (160°C). Season the short ribs with salt and black pepper. In a large Dutch oven, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 4-5 minutes per side. Remove and set aside.

    Sauté Vegetables

    In the same pot, add the onion, carrot, and garlic. Sauté until the onions are translucent, about 5 minutes. Add the salsify and Brussels sprouts, stirring to combine.

    Deglaze the Pot

    Pour in the red wine to deglaze the pot, scraping up any browned bits. Let it simmer for 2-3 minutes.

    Add Broth and Seasonings

    Add the beef broth and bay leaves to the pot. Return the short ribs to the pot, ensuring they are submerged in the liquid.

    Braise the Short Ribs

    Cover the pot and transfer it to the preheated oven. Braise for about 2.5 to 3 hours, or until the meat is tender and falling off the bone.

Finishing Touches

    Prepare Chestnuts

    In the last 15 minutes of cooking, add the chopped chestnuts to the pot to warm through.

    Serve

    Once done, remove the pot from the oven. Discard the bay leaves. Serve the braised short ribs with the vegetables and chestnuts, spooning the sauce over the top.
