    Prepare the Vegetables

    Clean and peel the salsify, then cut it into 2-inch pieces. Blanch the Brussels sprouts in salted boiling water for 3-4 minutes, then shock in ice water to preserve their color.

    Prepare the Chestnuts

    Score the chestnuts and boil them in water for about 10 minutes. After boiling, peel them and set aside.

Cooking the Wagyu

    Cook the Wagyu Rib Eye

    Season the A5 Wagyu rib eye generously with salt and black pepper. Heat olive oil in a heavy skillet over medium-high heat. Sear the steak for 3-4 minutes on each side for medium-rare, adjusting time for desired doneness. Add butter to the pan during the last minute of cooking, basting the steak with the melted butter.

    Cook the Vegetables

    In the same skillet, add the salsify and cook for about 5 minutes until tender. Add the Brussels sprouts and chestnuts, cooking together for an additional 3-4 minutes. Season with salt and pepper to taste.

    Slice the Wagyu rib eye and serve alongside the sautéed salsify, Brussels sprouts, and chestnuts. Drizzle with any pan juices for added flavor.
