Method

Panna Cotta Preparation

    Melt Brie

    In a saucepan, combine the heavy cream, milk, and sugar. Heat over medium heat until the mixture is warm but not boiling. Add the Brie de Meaux and stir until melted and smooth.

    Bloom Gelatin

    In a small bowl, sprinkle the gelatin over 2 tablespoons of cold water and let it sit for 5 minutes to bloom.

    Combine Ingredients

    Once the Brie mixture is melted, remove it from the heat and stir in the bloomed gelatin until fully dissolved. Add a pinch of salt.

    Chill

    Pour the mixture into serving cups or molds and refrigerate for at least 4 hours or until set.

Assembly

    Prepare Garnishes

    While the panna cotta sets, prepare the garnishes: slice the saucisson sec, pit and slice the green olives, and slice the Jerusalem artichokes thinly.

    Plate

    Once the panna cotta is set, carefully unmold if using molds. Garnish with cranberries, saucisson sec, green olives, candied walnuts, and Jerusalem artichoke slices.

    Serve

    Serve immediately as an elegant appetizer or part of a charcuterie board.
