Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix Dry Ingredients

In a bowl, sift together the flour, cocoa powder, baking powder, and salt.

  3. 3

    Whisk Eggs and Sugar

In a separate bowl, whisk the eggs and granulated sugar together until pale and fluffy. Add vanilla extract.

  4. 4

    Combine Mixtures

Gradually fold the dry ingredients into the egg mixture until well combined.

  5. 5

    Bake the Cake

Spread the batter onto a parchment-lined baking sheet and bake for 12-15 minutes, or until a toothpick comes out clean.

  6. 6

    Roll the Cake

Once baked, let the cake cool for a few minutes, then roll it up in the parchment paper and let it cool completely.

Filling and Assembly

  1. 7

    Prepare the Filling

In a bowl, whip the crème fraîche with powdered sugar and vanilla extract until soft peaks form.

  2. 8

    Unroll and Fill

Carefully unroll the cooled cake and spread the crème fraîche mixture evenly over the surface.

  3. 9

    Re-roll the Cake

Roll the cake back up gently, starting from one end.

  4. 10

    Decorate

Transfer the rolled cake to a serving platter. Dust with cocoa powder, add chocolate shavings, and top with seasonal fruit.
