Blini Preparation

Prepare the Yeast Mixture
In a small bowl, combine warm milk and yeast. Let it sit for about 5 minutes until frothy.

Mix Dry Ingredients
In a large bowl, whisk together buckwheat flour, all-purpose flour, and salt.

Combine Mixtures
Add the yeast mixture and beaten eggs to the dry ingredients. Mix until smooth. Let the batter rest for 1 hour at room temperature.

Cook the Blini
Heat a non-stick skillet over medium heat and melt a little butter. Pour a tablespoon of batter for each blini. Cook for about 2-3 minutes on each side or until golden brown.

Keep Warm
Transfer cooked blini to a plate and cover with a kitchen towel to keep warm. Repeat with remaining batter.

Top each blini with a dollop of sour cream, a spoonful of caviar, and sprinkle with chopped chives.

Serve the blini warm with lemon wedges on the side.
