Cook the Pasta

In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In a large saucepan, melt the butter over medium heat. Add the flour and whisk for about 2 minutes to create a roux. Gradually whisk in the milk, stirring continuously until the mixture thickens.

Add the Cheese

Remove the saucepan from heat and stir in the cheddar, mozzarella, fontina, and parmesan cheeses until melted and smooth. Add the truffle oil, salt, and black pepper to taste.

Combine Pasta and Sauce

Add the cooked elbow macaroni to the cheese sauce and stir until the pasta is evenly coated.

Add Vegetables

Fold in the halved cherry tomatoes and chopped spinach into the pasta and cheese mixture.

Prepare for Baking

Preheat your oven to 350°F (175°C). Transfer the mac and cheese mixture to a greased baking dish. Sprinkle the panko bread crumbs evenly on top.

Bake

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.
