Waffle Preparation
Make the Waffle Batter
In a large bowl, whisk together the flour, baking powder, salt, pepper, nutritional yeast, and chopped herbs. In a separate bowl, mix the almond milk and olive oil. Combine the wet and dry ingredients and mix until smooth.
Cook the Waffles
Preheat the waffle iron. Pour the batter into the preheated waffle iron and cook according to the manufacturer's instructions until golden brown. Keep warm.
Grilled Cauliflower
Prepare the Cauliflower
Preheat the grill or grill pan over medium-high heat. Toss the cauliflower florets with olive oil, smoked paprika, and salt. Grill for about 10-12 minutes, turning occasionally until tender and slightly charred.
Crispy Brussels Sprouts
Roast the Brussels Sprouts
Preheat the oven to 400°F (200°C). Toss the halved brussels sprouts with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20-25 minutes until crispy and golden.
Chipotle Chutney
Make the Chutney
In a small bowl, mix the diced mango, chipotle peppers, lime juice, and chopped coriander. Adjust seasoning as necessary.
