Prepare the Potatoes

Peel and chop the potatoes into quarters. Boil in salted water for about 15-20 minutes or until fork-tender. Drain and return to the pot.

Mash the Potatoes

Add butter and milk to the cooked potatoes, then mash until smooth. Season with salt and pepper to taste. Keep warm.

Prepare the Chicken

Pound the chicken breasts to an even thickness, about 1/2 inch. Season with salt and pepper.

Bread the Chicken

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Dredge each chicken breast in flour, dip in egg, and coat with breadcrumbs.

Fry the Chicken

Heat olive oil in a large skillet over medium-high heat. Fry the chicken for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Salad

In a bowl, toss mixed greens with sherry vinegar and chopped fresh herbs. Season with salt and pepper to taste.

Plate the mashed potatoes, top with the chicken Milanese, and serve with the mixed greens salad on the side.
