Base Rice Wine Blend
Combine base wines
In a clean 1.5–2 quart (1.5–2 L) nonreactive container or jug, pour 4 cups of makgeolli, 1 cup of clear rice wine (cheongju or neutral soju) and 1 cup cold filtered water. Gently stir to combine, avoiding vigorous agitation to preserve the makgeolli’s natural effervescence.
Taste the base. It should be creamy and slightly fizzy with mild sweetness. Adjust now if the base is overly strong—add up to 1/2 cup more water if needed.
Pine & Citrus Infusion
Prepare pine tips and fruit
Discard any woody, brown, or tough pine pieces. Roughly chop larger pine tips so they release aroma but remain sizable enough to strain out easily. Thinly slice the yuzu or Meyer lemon crosswise, keeping peel on to contribute bright oil.
Infuse
Add the prepared pine tips, sliced yuzu (or lemon), and 3 tablespoons of honey into the rice wine blend. Stir gently until the honey dissolves. Cover the container and let the mixture rest at cool room temperature (18–22°C / 64–72°F) for 4–6 hours to extract bright pine and citrus oils. For a stronger pine character, infuse up to 12 hours, but not more than 24 hours to avoid overly resinous bitterness.
After the initial infusion, taste every few hours to monitor intensity. The infusion should be aromatic, bright citrus-forward with a soft pine resin backbone.
Clarifying & Balancing
Add ginger and salt
Add 1 tablespoon thinly sliced ginger and 1 teaspoon sea salt to the infusion. Stir to combine; the ginger gives warmth and the salt lifts flavors. Let sit 30–60 minutes to integrate.
Optional mouthfeel adjustment
If you want a slightly silkier mouthfeel reminiscent of carefully finished liqueurs, dissolve 1 teaspoon gum arabic (or 1 tsp very slightly bloomed gelatin if you prefer) in 1 tablespoon warm water and whisk into the infusion. Allow 30 minutes for integration. Note: gelatin will set if chilled; gum arabic keeps liquid. This step is optional.
Taste and correct: if the drink is too tart from citrus, stir in up to 1 additional tablespoon honey; if too sweet, add up to 1/4 cup clear rice wine or water.
Straining & Rest
Coarse strain
Line a fine-mesh strainer with cheesecloth and place over a clean pitcher. Pour the infusion through to remove pine tips, fruit slices, and ginger. Gently press solids with the back of a spoon to extract liquid but avoid forcing bitter components.
Fine clarify
For a clearer final pour, strain again through a second layer of cheesecloth or a very fine chinois. If you used gelatin and it has chilled and set, gently warm the pitcher to return to liquid and re-strain.
Cover and refrigerate the finished Solsongju Damsoul Pine for at least 1 hour to marry flavors and chill. It keeps well refrigerated for 3–5 days; flavor will continue to mellow.
Finish & Serving
Serve
Fill chilled glasses with 1–2 ice cubes each (about 2 cubes for a larger rocks glass). Pour 5–6 ounces (150–180 ml) of the infused rice wine per serving. Garnish each glass with a small pine tip sprig laid across the rim or floated atop the drink. Optionally, express a thin lemon peel over the glass to release extra citrus oil.
Enjoy cold as a contemplative aperitif or paired with light Korean-style dishes such as steamed fish, seasoned greens, or simple banchan.
