Cabbage, Carrot & Apple Slaw

    Prep the vegetables and apple

    Trim outer leaves from cabbages. Using a sharp knife or mandoline, thinly slice green and red cabbage into fine ribbons. Peel and julienne the carrot. Core and julienne the apple, leaving the skin on for color. Place all sliced vegetables and apple in a large mixing bowl.

    Season and rest

    Sprinkle the sliced mixture with 1 tsp salt and 1/2 tsp black pepper. Add chopped dill and sliced chives. Toss thoroughly to combine. Let the mixture sit for 10 minutes to soften slightly and allow salt to draw out moisture.

Creamy Dill-Yogurt Dressing

    Whisk the dressing

    In a small bowl, combine 1/2 cup Greek yogurt, 2 tbsp mayonnaise, 1 tbsp apple cider vinegar, 1 tbsp fresh lemon juice, 1 tsp honey, 1/2 tsp Dijon mustard, 1 tsp olive oil, 1/2 tsp salt and 1/4 tsp black pepper. Whisk vigorously until smooth and slightly glossy. Taste and adjust acidity or sweetness to preference (add up to 1/2 tsp more honey or 1/2 tsp more vinegar).

    Dress the slaw

    Pour the dressing over the cabbage, carrot and apple mixture. Using tongs or two large spoons, toss thoroughly so the dressing coats all components evenly. If the slaw seems dry, add an extra teaspoon of olive oil or a splash (about 1 tsp) of water to loosen the dressing. Refrigerate for at least 10 minutes, up to 1 hour, to meld flavors.

Toasted Seeds & Garnish

    Toast seeds and prepare breadcrumbs

    Heat a small skillet over medium heat. Add 2 tbsp pumpkin seeds and 1 tbsp sunflower seeds; toast, stirring frequently, until fragrant and lightly colored, about 2–3 minutes. Transfer to a small bowl. In the same skillet add 3 tbsp breadcrumbs or panko with a small pat of butter if desired and toast until golden, about 2 minutes. Remove from heat and stir in 1/2 tsp lemon zest.

    Finish and serve

    Taste slaw and adjust seasoning if necessary. Transfer slaw to a serving bowl or individual plates. Sprinkle toasted seeds and breadcrumbs evenly over the top. Garnish with microgreens or baby herbs if using. Serve chilled or at cool room temperature as a bright, crunchy side (or as a crisp component in a composed plate).
