Prepare berries

Rinse all berries under cold water and drain well. Pat dry with paper towels. Hull and quarter the strawberries so pieces are roughly bite-sized. Measure out blueberries and raspberries and place in a small bowl.

Portion yogurt

Stir the vanilla Greek yogurt to a smooth consistency. If the yogurt is very thick, you may whisk in 1–2 tablespoons of milk to loosen slightly (optional). Divide the 4 cups of yogurt into 4 equal portions (1 cup per serving).

Layer parfaits

Choose 4 clear glasses or bowls. Spoon about 1/4 cup of granola into the bottom of each glass. Top each granola layer with 1/2 cup of yogurt. Add a spoonful (about 2–3 tablespoons) of mixed berries over the yogurt. Repeat: add another 1/4 cup granola, then the remaining 1/2 cup yogurt, and finish with the remaining berries. Reserve a small sprinkle of granola and a few berries for garnish on top.

Finish and garnish

Drizzle 1 teaspoon of honey or maple syrup over each assembled parfait (this uses about 4 tablespoons total). Sprinkle about 1 tablespoon of toasted sliced almonds on each parfait, if using. Garnish each with 2 small mint leaves. Serve immediately so granola stays crunchy; if preparing ahead, store granola separately and assemble within 30 minutes of serving.

Make-ahead and storage note

If you need to prepare components ahead: store yogurt in a sealed container in the refrigerator up to 3 days, wash and hull berries and keep them refrigerated in a covered container for up to 2 days, and keep granola in an airtight container at room temperature for up to 2 weeks. Assemble just before serving for best texture.
