Method
Bagel & Spread
Split the bagel and toast until golden and slightly crisp. Butter both cut sides immediately while hot so butter melts. If using mayo or cream cheese, spread on one or both halves after toasting.

Prepare vegetables
Thinly slice the onion and bell pepper into strips about 1/8–1/4 inch wide so they cook quickly.
Cook peppers and onions
Heat a 10–12 inch skillet over medium-high heat. Add 1 tablespoon olive oil. When shimmering, add the sliced onion and bell pepper, season with 1/8 teaspoon salt and a pinch of black pepper, and sauté 4–6 minutes until softened and edges are lightly browned. Transfer to a plate and keep warm.
Cook ribeye
Increase heat to high and add the thin-sliced ribeye in a single layer (work in batches if necessary). Season the steak with remaining 3/8 teaspoon kosher salt, 1/8 teaspoon black pepper and optional 1/4 teaspoon steak seasoning. Sear 30–60 seconds per side (thin slices cook very fast) until browned but still tender. Remove steak to the plate with vegetables and tent loosely with foil to keep warm and rest briefly.

Scramble eggs
Wipe the skillet clean or use a separate nonstick pan. Heat over medium-low and add 1 teaspoon butter. Once butter is melted and foaming (but not browning), pour in the egg mixture. Let eggs sit 10–15 seconds, then gently stir with a silicone spatula, pushing eggs from the edges to the center. Cook slowly, folding every few seconds, until mostly set but still soft and slightly creamy, about 2–3 minutes total.
Assembly & Serve
Layer the bottom half of the buttered bagel with the warm sliced ribeye, piling the meat evenly. Top the steak with the sautéed peppers and onions. Spoon the scrambled eggs with melted American cheese over the vegetables. Finish with the top bagel half. If desired, add a dash of hot sauce or ketchup and sprinkle chopped parsley or chives.
Serve immediately while hot. If transporting, wrap in parchment to keep contents together.
