Toast and butter bagel

Slice the bagel horizontally and toast until golden and crisp (about 2–3 minutes in a pop-up toaster or 3–4 minutes in a 350°F / 175°C oven). Spread 1 tablespoon of butter evenly on the cut sides while still warm.

Warm ham and melt cheese

Place the sliced ham on the bottom toasted bagel half. Heat briefly in a skillet over medium-low heat for about 30–45 seconds per side to warm through, or place under a broiler for 30–45 seconds. Top the warm ham with the shredded or sliced cheddar so it starts to melt while the eggs finish.

Assemble sandwich

Place the scrambled eggs (prepared in Eggs section) onto the ham and cheese layer. Cap with the top toasted bagel half and press gently. Serve immediately.

Whisk eggs

Crack 2 large eggs into a small bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon black pepper. Whisk until yolks and whites are fully combined and mixture is slightly frothy (about 20–30 seconds).

Cook scrambled eggs

Heat a nonstick skillet over medium-low heat. Add 1 teaspoon olive oil or butter and swirl to coat. Pour the egg mixture into the pan. Allow eggs to set at the edges for about 10–15 seconds, then gently push cooked portions from the edges toward the center with a silicone spatula, tilting the pan to allow uncooked egg to flow to the edges. Continue folding and gently stirring until eggs are mostly set but still soft and slightly creamy — about 1.5–2.5 minutes total. Remove from heat just before fully firmed; residual heat will finish them.

Season and keep warm

Taste and adjust seasoning if needed. If not assembling immediately, keep eggs warm by covering the pan off the heat for up to 5 minutes or transfer to a warm plate.
