Prepare steaks

Pat the 4 cube steaks dry with paper towels. If steaks are thicker than 1/2", lightly pound between plastic wrap to roughly 1/4–1/2" thickness. This helps even cooking and crisping.

Make dredge stations

In a shallow bowl or plate, combine 1 1/2 cups flour, 2 tsp salt, 1 tsp black pepper, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, and 1/4 tsp cayenne (optional). In a second shallow bowl, whisk together 1 cup whole milk and 2 large eggs until homogenous.

Dredge steaks

Working one at a time, dredge each steak in the seasoned flour, shaking off excess. Dip into the milk-egg wash, letting excess drip, then return to the flour mixture and press to coat both sides well. Shake off lightly and set on a wire rack for 5 minutes to let coating adhere.

Heat oil

In a large skillet (cast-iron preferred) heat about 1 cup vegetable oil over medium-high heat until shimmering and a pinch of flour sizzles when tested — about 350°F if using a thermometer. Reduce heat slightly to maintain a steady sizzle but not smoke.

Fry steaks

Working in batches so you do not crowd the pan, carefully add steaks to the hot oil. Fry 3–4 minutes per side until golden brown and internal temperature reaches 145–160°F depending on preference and thickness. Adjust heat as needed to avoid burning the crust. Transfer cooked steaks to a plate lined with paper towels or a wire rack set over a sheet tray. Reserve about 3 tablespoons of pan drippings (oil and browned bits) in the skillet for the gravy; pour off excess fat if needed.

Make roux

After removing steaks and keeping 3 tbsp pan drippings in the skillet, reduce heat to medium. Sprinkle 3 tbsp flour into the drippings and whisk constantly for 1–2 minutes until the raw flour smell cooks out and the mixture turns a light golden brown.

Add milk and season

Gradually whisk in 2 cups whole milk, a little at a time to avoid lumps. Bring the mixture to a gentle simmer, whisking continuously until thickened, about 3–5 minutes. If gravy becomes too thick, add up to 1/4 cup additional milk to reach desired consistency. Season with 1 tsp kosher salt and 1 tsp freshly ground black pepper. Taste and adjust seasoning.

Finish gravy

Lower heat to keep gravy warm while you cook eggs. If you like a smoother gravy, strain through a fine-mesh sieve to remove any lumps and brown bits (optional). Keep gravy over very low heat, stirring occasionally.

Cook eggs

In a separate nonstick skillet, melt 1 tbsp unsalted butter over medium-low heat (or use a small amount of reserved oil). Crack 4 large eggs into the pan and cook to your preference: sunny-side up (cover pan for 2–3 minutes until whites set), or cook 2–3 minutes then flip for over-easy/medium as desired. Season with 1/2 tsp salt and 1/4 tsp black pepper while cooking.

Assemble plates

Place one fried cube steak on each plate (for 4 servings). Spoon a generous amount of country gravy over the steak, letting some run onto the plate. Top each steak with a cooked egg. Garnish with a sprinkle of chopped fresh parsley if desired.
