Decide which mix-ins and cheeses you want for each sandwich. For a plan to serve 6 sandwiches, use about 8 eggs total and distribute mix-ins evenly (about 2–3 tablespoons per sandwich for denser ingredients like ham or bacon, larger amounts for vegetables).

If using raw vegetables (bell pepper, onion, mushrooms), finely dice or slice them. Mince chives and chiffonade basil. Shred cheeses if not pre-shredded. Split English muffins/bagels and butter lightly for toasting.

If using bacon, ham or sausage that needs cooking, cook first: crisp bacon in a skillet, drain and chop; brown sausage and crumble; pan-fry or sear diced ham briefly. Pat cooked proteins dry to remove excess fat.

Sauté Mix-ins (if using vegetables)

Sauté vegetables

Heat 1 tablespoon olive oil in a medium skillet over medium heat. Add diced onion and bell pepper; cook 4–5 minutes until softened. Add sliced mushrooms and cook 3–4 more minutes until mushrooms release moisture. Season lightly with 1/4 tsp salt and 1/8 tsp pepper. If using spinach, add it at the end and cook 1 minute until wilted. Transfer vegetables to a bowl and set aside.

Make the Scramble

Whisk eggs

In a medium bowl whisk the 8 eggs with 1/2 cup whole milk, 1 tsp fine sea salt and 1/2 tsp freshly ground black pepper until combined and slightly frothy. The milk lightens and softens the curds.

Cook low and slow

Melt 2 tablespoons unsalted butter in a large nonstick skillet over medium-low heat until foamy but not browned. Pour in the egg mixture. Let eggs sit undisturbed for 10–15 seconds, then using a silicone spatula gently push eggs from the edges toward the center, forming large soft curds. Continue to cook, stirring occasionally, keeping the heat low so eggs remain creamy. This should take about 3–5 minutes.

Add mix-ins and cheese

When eggs are mostly set but still moist (slightly underdone), add your chosen mix-ins: about 1/4 to 1/2 cup total cooked proteins or vegetables per batch and 1/2 to 3/4 cup shredded cheese (or 2–3 provolone slices). Gently fold them into the eggs and remove the pan from heat while residual heat finishes the eggs. Taste and adjust seasoning if needed.

Toast & Assemble

Heat a griddle or skillet over medium heat. Lightly butter English muffin halves or bagel/bun and toast cut sides until golden, about 2–3 minutes.

Spread a thin layer of cream cheese or mayonnaise on the bottom half of each toasted bread if desired. Place a warm portion of the scramble on the bottom half (aim for about 1/6 of the scramble per sandwich).

Top the eggs with additional cheese slice or a sprinkle of shredded cheese so it melts slightly from the warm eggs. Add optional garnishes: avocado slices, microgreens, chives, basil or a few drops of hot sauce. Sprinkle everything bagel seasoning on the top half if desired.

Close the sandwich and press gently for 5–10 seconds. Serve immediately while warm.

To prepare in advance: cook scramble completely, cool quickly, and store in an airtight container in the refrigerator up to 3 days. Toast bread just before serving. Reheat scramble gently in a skillet over low heat with a splash of milk, or microwave in 30-second increments stirring between until warm.
