Cook bacon
Place a 10–12-inch skillet over medium heat. Add the cider house bacon slices in a single layer. Cook 3–5 minutes per side until browned and crisp to your liking. Transfer to a paper-towel-lined plate. Reserve 1 teaspoon bacon fat in the pan (or add 1 tsp neutral oil if pan is dry). Crumble or fold bacon to fit the bagel after cooling slightly.

Beat eggs
Crack the 3 large eggs into a bowl, add 1 tablespoon milk or half-and-half, 1/4 teaspoon salt and 1/8 teaspoon pepper. Whisk until homogenous and slightly frothy.
Scramble gently
Return the skillet with reserved bacon fat to low–medium-low heat. Add 1 tablespoon unsalted butter and let it melt but not brown. Pour in the beaten eggs. Let eggs sit undisturbed for 10–15 seconds, then using a silicone spatula, gently push eggs from the edges toward the center, forming soft curds. Continue stirring every 10–15 seconds until eggs are mostly set but still creamy — about 2–3 minutes. Remove skillet from heat a few seconds before fully set; residual heat will finish them. Taste and adjust salt/pepper if needed.
Bagel & assembly
Toast bagel
Split the bagel. Toast to desired doneness in a toaster or under a broiler. For a slightly softer interior, after toasting, place the cut bagel face-up in a skillet with about 1/4 cup water, cover tightly for 20–30 seconds to steam briefly, then remove cover.
Spread bacon jam
Smear 2 tablespoons house bacon jam on the inside of the top bagel half. If jam is very cold, warm 10–15 seconds in the microwave to make it spreadable.
