Eggs and Salmon

Method

Preparing the Eggs

1

Scramble the Eggs

In a bowl, whisk the eggs with a pinch of salt and pepper. Heat butter in a non-stick skillet over medium heat. Pour in the eggs and gently stir with a spatula until they are softly scrambled, about 3-5 minutes.

2

Add Cream Cheese

Once the eggs are nearly done, add the cream cheese and gently fold it into the eggs until just combined. Remove from heat.

Preparing the Fruit Salad

3

Mix the Fruit Salad

In a bowl, combine the mixed fresh fruit. Drizzle with honey and lemon juice, then toss gently to combine.

Plating

4

Serve

Plate the scrambled eggs on a dish, crown with slices of smoked salmon, and serve alongside a generous helping of fresh fruit salad.
