Brewing Process
1. Mash the Grains
In a large brew kettle, add 6 gallons of water and heat to around 160°F (71°C). Add the Pilsner, Munich, and Caramel malts into a grain bag or directly into the water, and maintain the temperature around 150°F (65°C) for 60 minutes.
2. Sparging
After mashing, remove the grains and rinse them with hot water to extract more sugars. Collect the wort (liquid) in the brew kettle.
3. Boiling
Bring the wort to a boil and add the hops. Boil for 60 minutes, stirring occasionally. This step adds bitterness and aroma to the beer.
4. Cooling the Wort
After boiling, cool the wort to around 70°F (21°C) as quickly as possible using a wort chiller or an ice bath.
5. Fermentation
Transfer the cooled wort to a sanitized fermenter and pitch the yeast. Seal the fermenter with an airlock and let it ferment at a cool temperature (around 50-55°F or 10-13°C) for about 2 weeks.
6. Bottling
Once fermentation is complete, prepare a priming solution by dissolving the priming sugar in a small amount of boiling water and let it cool. Add the priming solution to the beer, then transfer into sanitized bottles, leaving some space at the top.
7. Carbonation
Cap the bottles and let them carbonate at room temperature for about 1-2 weeks. This step creates the carbonation needed for the beer.
8. Chill and Serve
After carbonation, refrigerate the bottles, then serve cold. Enjoy your homemade Greek lager beer!
