Beef Carbonnade
Prepare the Beef
Cut the beef chuck roast into large chunks, about 2 inches in size. Season generously with salt and pepper.
Combine Ingredients
Return the browned beef to the pot. Pour in the dark Belgian beer and beef broth. Stir in brown sugar, Dijon mustard, thyme, and bay leaves. Bring to a simmer.
Stew the Carbonnade
Cover the pot and reduce heat to low. Let it simmer for 2-3 hours, stirring occasionally, until the beef is tender.
Idaho Mashed Potatoes
Boil the Potatoes
Bring the water to a boil over high heat. Add salt to the water and cook the potatoes for about 15-20 minutes, or until tender.
