Wear protection

Put on gloves and eye protection. Work in a well-ventilated area. Keep hands away from face and avoid touching surfaces that will contact food without re-gloving.

Stem the super hot peppers and roughly chop them. Chop jalapeños/fresnos and carrots. Peel garlic, shallots, and onion and quarter the larger pieces. Keep prep consistent in size so everything blends evenly.

Cook Down

Heat a medium saucepan over medium heat and add 2 tablespoons neutral oil. Add shallots, onions, carrots and a pinch of the salt. Sauté, stirring, until softened and translucent, about 5–7 minutes. This mellows raw harshness from the superhot peppers and adds body.

Add the chopped hot pepper blend (Reaper, Ghosts, jalapeño/fresno) and garlic to the pan. Sauté 2–3 minutes just to warm and release aroma—do not overcook to avoid burning. Add 1/2 cup water, cover, and simmer gently for 6–8 minutes until peppers and carrots are fully softened.

Blend & Emulsify

Transfer the cooked pepper mixture to a high-speed blender. Add 1 cup distilled white vinegar, 1/4 cup rice vinegar, 2 tablespoons kosher salt, 2 teaspoons sugar, 1 teaspoon soy sauce (if using), and 1 teaspoon lemongrass or lime zest (if using). Blend on high until very smooth, 60–90 seconds. Hold lid down with a towel to avoid splatter.

Taste carefully (with gloves) and adjust seasoning: more salt to taste, more sugar if it needs balance, or additional vinegar for acid. If sauce is too thick, add up to 2–4 tablespoons water and pulse to thin.

For a silkier, more classic sriracha texture, while blender is running on low, drizzle in 1 tablespoon neutral oil to emulsify. If you want thicker body, sprinkle 1/4 teaspoon xanthan gum evenly over the running blender and blend 15–20 seconds more.

Finish & Preserve

Pass the blended sauce through a fine-mesh sieve into a bowl using a spatula to press solids and achieve a smooth texture. Re-season the strained sauce if needed and stir in 1 tablespoon fresh lemon juice.

Pour the finished sauce into sterilized bottles or jars, leaving 1/2 inch headspace. Optional: pour 1 tablespoon neutral oil on top of each jar to create a slight protective layer. Seal and refrigerate.

Allow the flavors to meld in the refrigerator for at least 24–48 hours before use. Taste after 48 hours and adjust acidity or salt if desired. Refrigerated, the sauce will keep for 2–3 months; for longer shelf life, follow proper canning/preservation practices.
