Method

Prepare edamame

Cook

Bring 4 cups water and 1 tsp kosher salt to a rolling boil in a medium pot. Add 1 cup frozen edamame (shelled or in pods) and return to a boil. Cook for 3–5 minutes until bright green and tender but still slightly firm. If using pods, cook 4–5 minutes. Drain immediately in a colander and transfer to an ice bath (optional) to stop cooking and preserve color. Drain well.

If you prefer to steam: place edamame in a steamer basket over boiling water, cover, and steam 5–7 minutes until tender. Drain.

Make chili-garlic sauce

Aromatics

In a small skillet over medium-low heat, warm 1 tbs neutral oil. Add 2 cloves finely minced garlic and 1 tsp minced ginger. Cook, stirring constantly, 30–45 seconds until fragrant but not browned.

Combine

Remove skillet from heat briefly. Stir in 1 tsp chili-garlic sauce and 1 tsp chili crisp (if using). Add 1 tsp soy sauce, 1 tsp rice vinegar, 1 tsp honey or maple syrup, 0.5 tsp toasted sesame oil, 0.5 tbs fresh lime juice, and 0.25 tsp red pepper flakes (if using). Taste and adjust: more chili-garlic for heat, more honey for sweetness, or more lime for brightness.

Toss & finish

Place the drained warm edamame in a mixing bowl. Pour the prepared chili-garlic sauce over the edamame while warm so it absorbs flavor. Toss thoroughly with a spoon or shake in a tightly sealed container until evenly coated.

Transfer to a serving bowl. Sprinkle 1 tsp toasted sesame seeds, 1 tbs thinly sliced scallion, and 1 tbs chopped cilantro (if using) over the top. Finish with a light dusting of extra coarse salt (about 1/4 tsp) to taste and an additional squeeze of lime if desired.

Serve immediately warm or at room temperature as a healthy, spicy snack or appetizer.
