Chill and prepare glassware
If possible, chill glasses in the freezer for 5–10 minutes. Fill each serving glass about halfway with ice cubes (roughly 1/2 cup per 8-oz serving).
Pour 2 cups carbonated water per serving into a pitcher or measure for batch preparation. If making individually, measure 8 fl oz (1 cup) per glass and reserve.

Add sweetener and citrus
For each 8-oz serving, add 1 tablespoon simple syrup to the glass (or 2 tablespoons for sweeter soda). Add 1/2 tablespoon lemon juice and 1/2 tablespoon lime juice if using. Stir gently to combine.
If preparing a pitcher: combine 4 cups carbonated water with 1/2 cup simple syrup and the lemon and lime juice in a chilled pitcher. Stir gently once to blend — avoid vigorous stirring to keep carbonation.
Aromatics & Garnish
Muddle mint (optional)
If using mint, clap the sprigs between your hands to release oils or gently muddle them in the bottom of the serving glass before adding ice and liquid. Do not over-muddle into a paste.
Add 1–2 dashes of bitters to each glass if using for depth of flavor. Garnish with a citrus wheel or wedge and a mint sprig.
Serve immediately. Stir lightly with a straw or spoon once after garnishing to lift flavors, and enjoy cold.
