Method
Curry Broth
Bloom curry paste
Add the red curry paste, turmeric powder, and curry powder to the aromatics. Cook, stirring constantly, for 1–2 minutes until the paste becomes fragrant and slightly darkened. This blooms the spices and removes raw edge.
Add liquids and season
Pour in 1 cup of the coconut milk and stir to combine with the paste, scraping any browned bits from the bottom. Add the remaining coconut milk and the chicken stock. Stir in fish sauce, palm sugar, and kaffir lime leaves if using. Bring to a gentle simmer over medium-low heat.
Simmer
Reduce heat to low and simmer gently for 10 minutes to meld flavors. Taste and adjust seasoning: add more fish sauce for saltiness, sugar for sweetness, or a squeeze of lime later when serving.
Protein and Noodles
Cook raw noodles (if using dried or fresh for boiling)
Bring a separate pot of salted water to a boil. Add 8 oz egg noodles and cook according to package instructions until just tender (al dente). Drain and rinse briefly under warm water to stop cooking. Divide into serving bowls. If using fresh noodles for frying as garnish, reserve a portion (about 1 cup) dry/fresh for frying.
Poach chicken in broth
Once the broth is gently simmering, add the thinly sliced chicken thighs in a single layer. Simmer gently for 6–8 minutes or until chicken is cooked through (internal temperature 165°F / 74°C). Stir gently to separate pieces. Remove pot from heat and keep warm.
Fry crispy noodles (for garnish)
Heat 1 cup neutral oil in a small skillet or small pot to about 350°F (hot but not smoking). Add reserved fresh/dry egg noodles or a separate package of thin egg noodles in small batches. Fry until puffed and crispy, about 20–40 seconds per small nest; drain on paper towels. Season lightly with a pinch of salt. Reserve 1 cup for topping.
Optional Spice Oil
Make chili oil: Warm 2 tablespoons neutral oil in a small saucepan over low heat. Add ground chili flakes and let steep off the heat for 1–2 minutes. Stir in 1/2 teaspoon sesame oil. Use to drizzle over finished bowls to add heat and aroma. Adjust quantity to taste.
Toppings & Assembly
Top and garnish
Top each bowl with pickled mustard greens, thinly sliced shallots, scallions, fresh cilantro, a handful of the fried crispy noodles, and a squeeze of lime. Sprinkle crushed red chili to taste and drizzle some of the optional chili oil if desired.
Serve
Serve immediately while broth is hot and crispy noodles remain crunchy. Provide extra lime wedges, fish sauce or chili oil at the table for adjustments.
