Prepare
If using frozen edamame, thaw under cold running water for 1–2 minutes or place frozen pods directly into boiling water (no need to fully thaw). Rinse fresh edamame pods and trim any rough stem ends if desired.
Boil or steam
Boiling method: In a medium saucepan, bring 6 cups of water to a vigorous boil. Add 1 tablespoon of coarse sea salt to the water. Add 1 cup of edamame pods and cook uncovered 3–5 minutes for frozen (2–3 minutes for fresh) until pods are bright green and tender-crisp. Steaming method: Bring 1–2 inches of water to a boil in a pot with a steamer basket. Add 1 tablespoon salt to the water. Place edamame in the basket, cover, and steam 4–6 minutes until tender.
Drain and season
Drain the edamame in a colander and immediately transfer to a bowl. While hot, sprinkle with 1 teaspoon flaky sea salt (or to taste) and toss to distribute. If desired, squeeze fresh lemon juice over the pods (use about 1/2 cup of lemon wedges to taste) and toss briefly.
Serve
Serve warm or at room temperature. To eat, pinch or squeeze the bean from the pod into your mouth and discard the pod. Adjust salt or lemon to taste.
