Method

Prepare vegetables
Finely chop the napa cabbage, place in a bowl, sprinkle with a little salt (about 1/8 tsp), mix and let sit 5 minutes. Squeeze out excess liquid with hands or a kitchen towel until relatively dry. Combine squeezed cabbage with grated carrot and chopped green onions in a mixing bowl.
Make filling
To the bowl with vegetables add ground chicken, minced ginger and garlic, 1.5 tbsp soy sauce, 1 tsp sesame oil, 1 tbsp rice wine (or sherry), 1 tsp cornstarch, 1/4 tsp salt and 1/8 tsp white pepper. Mix thoroughly with a spoon or by hand until mixture is cohesive and slightly sticky (this helps filling hold together). If using the vegetarian option, substitute pressed tofu + chopped mushrooms for the ground chicken and proceed otherwise the same.
Portion wrappers
Lightly dust a work surface with 1 tbsp flour to keep wrappers from sticking. Keep remaining wrappers covered with a damp towel so they don’t dry out. Place about 1 rounded teaspoon (approximately 12–15 g) of filling in the center of each wrapper.
Fold and seal
Moisten the wrapper edge with a few drops of water. Fold wrapper in half to form a half-moon, or use a pleated crescent fold for a traditional look. Press edges firmly to seal, ensuring no air pockets. Repeat until all wrappers are filled. This recipe yields ~30 dumplings (serves 4).
Cooking — steamed (pan-steamed) or fried
Pan-steam (preferred for soft dumplings)
Heat a large nonstick skillet over medium-high heat and add 1 tablespoon neutral oil. Arrange dumplings in the pan flat-side down without crowding (work in batches). Fry for 1–2 minutes until bottoms are light golden. Add 1/4 cup water to the pan immediately, cover with a tight-fitting lid, reduce heat to medium-low and steam for 5–6 minutes until wrappers become translucent and filling reaches 74°C (165°F). Remove lid and cook uncovered 30 seconds to re-crisp the bottoms if desired. Transfer to a plate and keep warm. Repeat with remaining dumplings.
Deep-fry or shallow-fry (for crispy dumplings)
For deep frying: heat oil in a heavy pot to 350°F (175°C). Fry dumplings in batches 3–4 minutes until deep golden and cooked through; drain on paper towels. For shallow-fry: heat 2 tbsp oil in a skillet over medium-high, add dumplings and fry 2–3 minutes per side until golden and cooked through. Internal temp should be 74°C (165°F).
Zesty sweet soy dipping sauce
Whisk together 1/4 cup soy sauce, 2 tbsp rice vinegar, 1 tbsp honey, 1/2 tsp toasted sesame oil, 1/2 tsp chili paste (or adjust to taste), 1 tbsp minced scallion, 1 tsp toasted sesame seeds and 1 tsp fresh lime juice in a small bowl. Taste and adjust: add more honey for sweetness, vinegar for tang, or chili for heat. Serve in a small dipping bowl alongside dumplings.
Finishing & serving
Arrange dumplings on a platter. For fried chicken or fried veggie versions, use the frying method; for steamed/damp-soft dumplings use the pan-steam method. Garnish with extra sliced scallions and a sprinkle of sesame seeds. Serve immediately with the zesty sweet soy dipping sauce.
