    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add the onion, green bell pepper, and celery. Sauté until the vegetables are soft, about 5 minutes.

    Add Garlic and Sausage

    Stir in the minced garlic and sliced andouille sausage. Cook for an additional 2-3 minutes until the sausage is browned.

    Cook Chicken

    Add the diced chicken breast to the pot and cook until it is no longer pink, about 5 minutes.

    Combine Ingredients

    Add the diced tomatoes (with their juice), chicken broth, long-grain rice, Cajun seasoning, bay leaves, salt, and black pepper. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes or until the rice is tender.

    Add Shrimp

    Stir in the shrimp and cook for an additional 5 minutes, until the shrimp are pink and cooked through.

    Remove the bay leaves. Serve hot, garnished with chopped green onions.
