Prepare loaf
If the Macrina loaf is whole, slice it into 1/2 to 3/4-inch thick slices. Arrange slices on a large platter or wooden board for serving. If you prefer warm bread, preheat oven to 180°C (350°F). Place slices on a baking sheet in a single layer and warm for 5–7 minutes until just heated through and the crust is slightly crisp; do not overbake.
House-made olive oil
Combine ingredients
In a small bowl or shallow dipping dish, pour 120 ml extra-virgin olive oil. Add the minced garlic, chopped rosemary, thyme leaves, red pepper flakes, lemon zest (if using), and freshly ground black pepper.
Season
Stir gently to combine. Sprinkle the sea salt over the surface; flaky salt is preferred so diners get a little crunch when dipping. Let the mixture rest at room temperature for 10–15 minutes to allow the flavors to meld and to temper the garlic's bite.
