Method

Brew

  1. 1

    Measure and prepare

Measure 12 cups of fresh cold water. Place a clean coffee filter into the basket of your drip coffee maker (or set up your pour-over cone).

  2. 2

    Add coffee grounds

Add 12 tablespoons (approx. 3/4 cup) of medium-roast ground coffee to the filter, spreading evenly so water will flow through uniformly.

  3. 3

    Brew

Start the coffee maker and allow it to brew the full 12 cups. Brewing should take about 8–12 minutes depending on the machine. Once brewing is complete, keep the carafe on the hot plate to maintain temperature, but do not reheat on high for extended periods to avoid bitter flavor.

  4. 4

    Optional reheat

If you need to reheat later, transfer a portion to a stovetop pot and warm gently over low heat, or use a thermal airpot to maintain temperature — avoid boiling.

To Serve

  1. 5

Set out cups, spoons/stirrers, sugar, milk, and half-and-half. Offer guests to add sugar and milk to taste. Typical starting portions per 8–12 oz cup: 1–2 teaspoons sugar, 1–3 tablespoons milk or cream.

  2. 6

Refills: Keep the brewed coffee hot and refill cups as requested. Brew additional batches as needed to keep a steady supply; use the same ratio of 1 tablespoon coffee per cup (8 oz) or 12 tablespoons per 12 cups.

  3. 7

Clean-up: After service, discard used grounds and filter. Rinse carafe and basket. Wash all serving items.
