Ground Beef

Cook aromatics

Heat a medium skillet over medium heat and add 1 tsp vegetable oil. Add the finely diced onion and cook, stirring occasionally, until translucent, about 3–4 minutes. Add minced garlic and cook 30 seconds until fragrant.

Brown beef

Increase heat to medium-high, add ground beef to the skillet, break it up with a spatula, and cook until mostly browned, about 5 minutes.

Season and simmer

Stir in chili powder, ground cumin, smoked paprika, salt, black pepper, and tomato paste. Mix thoroughly so spices coat the meat. Add 1/4 cup water, reduce heat to medium-low, and simmer until the mixture is slightly thickened and most liquid has evaporated, about 4–5 minutes. Taste and adjust seasoning. Keep warm.

Jalapeño Queso

Warm dairy

In a small saucepan over low heat, combine half-and-half (or milk) and softened cream cheese. Whisk gently until cream cheese melts and the mixture is smooth, about 2–3 minutes. Do not boil.

Add cheese

Gradually add the grated cheddar and Monterey Jack in small handfuls, whisking frequently to melt evenly and form a smooth sauce. Keep heat low to prevent separation.

Finish and thicken

Stir in minced pickled jalapeño and optional sliced fresh jalapeño. Mix cornstarch with 1 tsp cold water to make a slurry, then whisk it into the warm cheese to slightly thicken (about 1 minute). Season with 1/4 tsp salt and a pinch of black pepper. Keep warm on lowest heat and stir occasionally.

Pico de Gallo & Toppings

Make pico de gallo

In a bowl combine diced tomatoes, finely diced onion, chopped cilantro, lime juice, and 1/4 tsp salt. Stir gently and let sit 5–10 minutes for flavors to meld; taste and adjust lime or salt as needed.

Prep sour cream & guac

Spoon sour cream and guacamole into small ramekins for serving, or portion on the side if building multiple tin cans.

Assembly in Tin Can

Layer chips

If using a raw metal can for serving, ensure it is clean with both ends removed and edges smoothed. Place 2 cups of tri-colored tortilla chips into the bottom of the can to form the first layer (press gently so chips are supported).

Add beef

Spoon about 1/3 of the warm seasoned ground beef (roughly 1/3 cup) over the chips to create an even layer.

Drizzle queso

Ladle about 3 tablespoons of warm jalapeño queso over the beef layer, enough to coat chips but not soak them.

Add pico & jalapeños

Spoon 2 tablespoons of pico de gallo over the queso layer and scatter a few reserved pickled jalapeño slices (about 1 tsp) for visible heat.

Repeat layers

Repeat layering two more times: 2 cups chips, 1/3 of beef, 3 tbsp queso, 2 tbsp pico, and jalapeño slices, finishing with a top layer of chips lightly drizzled with the remaining queso if desired.

Finish and serve

Top the final chip layer with shredded lettuce (about 1/4 cup), a few extra jalapeño slices for garnish, and place the tin can on a small plate. Serve immediately with ramekins of sour cream and guacamole for dipping.
