Poppers
Prepare jalapeños
Wash jalapeños. Wearing gloves if desired, slice each jalapeño lengthwise and remove seeds and membranes with a small spoon to reduce heat, leaving the stem intact if you want a handle. Pat dry with paper towels.
Cook chorizo
Heat a medium skillet over medium heat. Crumble and cook the chorizo until fully browned and cooked through, about 6–8 minutes. Transfer to paper towels to drain excess fat and let cool slightly.
Make filling
In a medium bowl, combine the room-temperature cream cheese, cooked and cooled chorizo, shredded Mexican blend cheese, chopped cilantro (if using), garlic powder, smoked paprika, kosher salt, and black pepper. Mix until uniform and spreadable. Taste and adjust seasoning.
Stuff jalapeños
Using a small spoon or piping bag, fill each halved jalapeño with the chorizo-cream cheese mixture, pressing firmly so the filling is level with the pepper edges.

Wrap with bacon
Cut bacon slices in half crosswise if needed to fit around each pepper half. Wrap one bacon slice (or half slice) around each stuffed jalapeño half, securing the ends underneath or with a toothpick if necessary.
Set up breading station
Place the flour in a shallow bowl and season lightly with a pinch of salt and pepper. Beat the eggs in a second shallow bowl. Place panko breadcrumbs in a third shallow bowl. If panko is dry, you can pulse it 2–3 times in a food processor for better adherence.
Bread the poppers
Dredge each bacon-wrapped stuffed jalapeño first in flour, shaking off excess, then dip into beaten egg, letting excess drip off, and finally press into panko breadcrumbs to coat evenly. Place breaded poppers on a baking sheet lined with parchment. If using toothpicks, insert them now to keep bacon in place.
Fry or bake (two options)
Option A — Shallow fry: Heat about 1/4"–1/2" vegetable oil in a large skillet over medium heat until 350°F (175°C) or small breadcrumbs sizzle. Fry poppers in batches, 2–3 minutes per side, turning until bacon is crisp and panko is golden, then transfer to a wire rack lined sheet to drain and finish in a 375°F (190°C) oven for 6–8 minutes to ensure bacon and filling are fully cooked. Option B — Bake: Preheat oven to 400°F (205°C). Place poppers on a wire rack set over a baking sheet and lightly brush or spray with oil. Bake 20–25 minutes until bacon is crisp and panko is golden and filling is hot (internal temp ~165°F / 74°C).
Rest
Remove poppers from oven or skillet and let rest 3–5 minutes so filling sets slightly. Remove toothpicks before serving if used.
To Serve
Arrange poppers on a platter. Serve with ranch dressing in a small bowl and lime wedges on the side for squeezing over. Recommend serving immediately while hot and crispy.
