Shrimp & Marinade

Make the marinade

In a medium bowl combine minced garlic, soy sauce, rice vinegar, sesame oil, brown sugar, and black pepper. Stir until sugar dissolves.

Add the peeled and deveined shrimp to the marinade and toss to coat. Let marinate 15–20 minutes at room temperature (no longer than 30 minutes to avoid texture changes).

Heat a grill pan or outdoor grill over medium-high heat and oil the grates lightly. Grill shrimp 2–3 minutes per side until opaque and slightly charred. Remove shrimp and let rest 2 minutes.

Toss the grilled shrimp with 3 tablespoons of the sweet chili sauce and 1 tablespoon lime juice so they are lightly glazed.

Sweet Chili Sauce & Finishing

Reserve remaining sweet chili sauce in a small bowl for serving. If you like a thinner sauce for drizzling, stir in up to 1 tablespoon water or lime juice.

Sprinkle chopped cilantro over glazed shrimp if using.

Mango Pico de Gallo

In a bowl combine diced mango, red bell pepper, red onion, minced jalapeño, 1 tablespoon lime juice and 1/2 teaspoon salt. Gently toss and taste; adjust salt or lime as desired. Let sit 5–10 minutes for flavors to meld.

Veggies & Lettuce

Separate and arrange Bibb lettuce leaves on a platter. Keep leaves whole to form cups.

Place julienned cucumber and carrot in separate small bowls or mound on the platter for assembly.

Asian Sesame Dressing

In a small bowl whisk together mayonnaise, soy sauce, rice vinegar, sesame oil, honey, grated ginger and toasted sesame seeds. Add water 1 teaspoon at a time to reach desired drizzling consistency. Taste and adjust salt or vinegar as needed.

Assembly & Serve

To assemble each wrap: place one lettuce leaf on a plate, add about 3–4 grilled shrimp (depending on size), top with 1–2 tablespoons mango pico de gallo, a small handful of julienned cucumber and carrot.

Drizzle 1 teaspoon of Asian sesame dressing over each assembled wrap and finish with a small spoonful (about 1/2 tablespoon) of reserved sweet chili sauce for heat and gloss.

Serve immediately while shrimp is warm. Provide extra sweet chili sauce and dressing on the side for guests to add as desired.
