Crab Cake Fritters
Prepare crab mixture
Gently check the jumbo lump crab meat for any shell pieces and pick them out. In a large mixing bowl, mash the softened cream cheese with a fork until smooth. Stir in the shredded cheddar, diced red bell pepper, chopped green onion, and minced parsley until evenly distributed.
Season and bind
Add the Old Bay seasoning, Worcestershire sauce, Dijon mustard, lightly beaten egg, 3 tablespoons panko breadcrumbs, salt, and black pepper to the cream cheese mixture. Fold in the crab meat gently, taking care not to overwork the lumps—mix just until ingredients are combined and the mixture holds together when formed into a ball. If too loose, add up to an additional 1 tablespoon panko.
Chill
Cover the bowl and refrigerate the crab mixture for 20–30 minutes to firm up; this helps the fritters hold their shape during frying.
Form and coat
Set up a breading station: a small bowl with the 1 tablespoon flour (season lightly with a pinch of salt and pepper), a bowl with the lightly beaten egg (you can reuse the egg from the mixture if extra needed), and a shallow dish with 1/2 cup panko breadcrumbs. Using a tablespoon or small cookie scoop, portion the chilled crab mixture into 18–20 small balls (about 1 tablespoon each) and gently shape into compact rounds. Lightly dredge each ball in flour, dip in beaten egg, then roll in panko to coat evenly. Place coated fritters on a tray while you heat the oil.
Heat oil
Pour about 3 cups of vegetable oil into a heavy-bottomed pot or deep fryer—enough to submerge fritters but leaving at least 2 inches headroom. Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small piece of bread or a pinch of batter—should brown in about 45–60 seconds.
Fry fritters
Working in batches (do not overcrowd), gently lower 6–8 fritters into the hot oil using a slotted spoon. Fry until golden brown and crisp, about 2.5–3.5 minutes, turning once halfway through for even color. Internal temperature should be hot and centers set (no raw egg). Remove with a slotted spoon and drain on a paper towel–lined rack or tray. Keep warm in a 200°F (95°C) oven if making multiple batches.
Finish
When all fritters are cooked, let rest 2 minutes, then transfer to a serving platter. Garnish with a sprinkle of extra Old Bay and chopped parsley if desired.
Cajun Aioli
Make aioli
In a small bowl, whisk together mayonnaise, fresh lemon juice, minced garlic, Cajun seasoning, hot sauce, smoked paprika, salt, and black pepper until smooth and well combined. Taste and adjust seasoning—add more hot sauce for heat or lemon for brightness.
Chill
Cover and refrigerate the aioli for at least 15 minutes to allow flavors to meld. Bring to room temperature for 5–10 minutes before serving if chilled very cold.
Serve
Serve the cajun aioli alongside the warm crab cake fritters for dipping. Provide lemon wedges on the side if desired.
