Hard-boil eggs

Place 12 large eggs in a single layer in a large saucepan. Add cold water to cover eggs by about 1 inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, remove from heat, and let sit for 10 minutes. After 10 minutes, transfer eggs to an ice bath (bowl of ice water) for at least 5 minutes to stop cooking and make peeling easier.

Peel and halve

Crack eggs gently and peel under running water. Pat dry. Slice each egg lengthwise and carefully remove yolks to a medium mixing bowl. Arrange white halves on a serving platter or tray.

Make filling

Mash the egg yolks with a fork until mostly smooth. Add 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon white wine vinegar, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Stir or whip with a small hand whisk until creamy and smooth. Taste and adjust seasoning if needed (add up to 1/2 tsp more salt or a pinch of sugar if too sharp).

Fill eggs

Spoon or pipe the yolk mixture back into the egg white halves, dividing it evenly among the 24 halves. Use a small spoon or a piping bag with a large round tip for a neater presentation.

Cook bacon

Preheat oven to 400°F (200°C). Lay 6 slices of bacon on a rimmed baking sheet lined with foil or parchment, spaced slightly apart. Bake for 12–18 minutes until crisp to your desired doneness. Remove to a paper-towel-lined plate and blot excess fat. When cool, chop into small pieces about 1/4 inch.

Prepare celery & chives

While bacon cooks, rinse and finely dice 2 celery stalks into small pieces (about 1/8–1/4 inch). Finely chop 2 tablespoons chives if using. This adds crunch and freshness to the eggs.

Assemble toppings

Sprinkle about 3 tablespoons blue cheese crumbles evenly over the filled deviled eggs. Scatter the chopped bacon pieces on top of each egg. Add a few small pieces of diced celery to each egg to provide crunch. Garnish with chopped chives and a light dusting of smoked paprika if desired.

Serve

Arrange deviled eggs on a platter and serve immediately, or refrigerate uncovered for 10–15 minutes to let flavors meld. For best texture, serve within 4 hours if left at room temperature; otherwise keep refrigerated until serving. Leftovers: store in an airtight container for up to 2 days.
