Prepare and fry wonton chips

Stack wonton wrappers and cut each into halves or quarters depending on preferred chip size (24 count yields 24–48 chips). Heat oil in a heavy skillet or deep pot to 350°F (175°C) or until a small scrap of wonton sizzles immediately. Fry wonton pieces in batches (do not overcrowd) for 30–45 seconds per side, turning once, until golden brown and crisp. Remove with a slotted spoon to a paper towel–lined tray and immediately sprinkle with 1/2 tsp fine sea salt. Let cool to room temperature; chips will crisp further.

Prepare tuna

Keep the tuna very cold. Trim any sinew and pat tuna dry with paper towels. Cut into approximately 1/4-inch dice for a tartare-style topping; aim for uniform pieces so they sit well on the wonton chips.

Marinate tuna

In a bowl combine 1 Tbsp low-sodium soy sauce, 1 tsp sesame oil, 1 Tbsp fresh lime juice, 1/2 tsp rice vinegar, and 1/2 tsp grated fresh ginger. Add the diced tuna and gently toss to coat. Fold in 2 Tbsp thinly sliced scallions and 1 tsp toasted sesame seeds if using. Season lightly with 1/4 tsp black pepper. Cover and refrigerate for 5–10 minutes while you finish other components (do not marinate longer than 15 minutes to preserve texture).

Prepare vegetables

While tuna rests, dice 1 avocado and half an English cucumber into small cubes; toss avocado immediately with a teaspoon of lime juice (from lime wedges) to slow browning. If pico de gallo is store-bought, drain excess liquid so chips stay crisp. Shred carrots if not pre-shredded. Set microgreens or cilantro aside for final garnish.

Make hoisin glaze

In a small bowl whisk together 3 Tbsp hoisin sauce, 1 tsp honey (or maple syrup), and 1 tsp water until smooth and slightly pourable. Adjust with a little extra water, 1/4 tsp at a time, if too thick. Transfer to a squeeze bottle or small spoon for drizzling.

Prepare sweet chili

Stir the sweet chili sauce to ensure even texture and transfer to a separate squeeze bottle or small bowl for drizzling or dotting atop nachos. Keep both sauces at room temperature for easy plating.

Assembly and Finish

Build the nachos

Arrange cooled wonton chips on a large serving platter in a single layer or slightly overlapping. Spoon a small mound (about 1 Tbsp) of marinated ahi onto each chip, distributing evenly to get roughly 24 topped chips. On top of or beside the tuna, place a small dice of avocado (about 1/2 tsp–1 tsp), a few cucumber cubes, and a pinch of shredded carrot for color and crunch. Add a small spoonful (about 1/2 tsp) of pico de gallo to a selection of chips for brightness.

Sauce and garnish

Drizzle the hoisin glaze sparingly (about 1/4 tsp per topped chip) over half the nachos for a sweet-savory hit. Drizzle or dot sweet chili sauce (about 1/4 tsp per chip) over the other half or combine on the same chips if desired. Finish all chips with a light sprinkle of flaky finishing salt (a pinch each) and scatter remaining sliced scallions and microgreens or cilantro. Offer lime wedges alongside for squeezing immediately before eating.

Serve

Serve immediately so wonton chips remain crisp. These are best enjoyed within 20 minutes of assembly. Recommend serving with extra sweet chili and hoisin glaze on the side.
