Prep and warm bagels

Preheat oven to 350°F (175°C). Slice the Jerusalem-style bagels in half horizontally. Lightly brush cut sides with 1 tablespoon of olive oil. Arrange cut-side up on a baking sheet and warm in the oven for 6–8 minutes until just toasted and fragrant. Remove and keep warm.

If you prefer a crispier exterior, finish under a broiler for 1–2 minutes watching closely to avoid burning.

Sundried Tomato Spread

Make the sundried tomato spread

Roughly chop the drained sundried tomatoes. In a small food processor or with a hand blender, combine chopped sundried tomatoes, cream cheese, lemon juice, minced garlic, 1 tablespoon olive oil, salt, and black pepper. Pulse until smooth but still slightly textured (about 20–30 seconds). Taste and adjust salt or lemon as needed.

Transfer spread to a small bowl and smooth the top with a spatula. If mixture is too thick, stir in up to 1 tablespoon extra olive oil or a teaspoon of water to loosen.

Labneh Za'atar

Prepare labneh with za'atar

In a bowl, stir together labneh, 1 tablespoon of za'atar, 1 tablespoon extra virgin olive oil, and 1/2 teaspoon salt until combined and creamy. Transfer to a shallow serving bowl and use the back of a spoon to create a slight swirl or well in the center.

Sprinkle the remaining 1 tablespoon of za'atar over the top and drizzle with the remaining 1 tablespoon olive oil. Cover and refrigerate until ready to serve (can be made up to 4 hours ahead).

Assemble the platter

Place the warmed bagel halves on a large serving board or platter. Spoon the sundried tomato spread into a small bowl and place it on the platter. Put the labneh za'atar bowl next to it.

Arrange the olives and chopped parsley around the bowls and bagels. Drizzle a light stream of olive oil (about 1 tablespoon) over the labneh surface and over the sundried tomato spread if desired. Sprinkle toasted sesame seeds lightly over bagels or labneh for extra texture.

Serve with lemon wedges on the side so guests can squeeze a little brightness over the labneh or bagels. Recommend slicing bagels into quarters for easy sharing.
